What are the Benefits of Chia Seeds?
Seeds from Mexico
The chia seeds are harvested from the sage Salvia hispanica, a herbaceous plant native to Mexico. The consumption of these small mottled seeds dates back to pre-Colombian civilizations. The Toltecs, Mayas, and then the Aztecs successively integrated chia seeds into their basic diet due to their nutritional properties.
Even today, they are mostly grown in Central and South America (Peru, Bolivia, Mexico…). They are then marketed whole, ground, or in the form of vegetable oil to be consumed as is or integrated into recipes.

Like flax seeds or psyllium, chia seeds are mucilaginous. They are surrounded by a plant substance called mucilage, composed of polysaccharides. It has the particularity of swelling and transforming into a viscous gel in the stomach. This gel can absorb up to 10 times its weight in water, thereby facilitating transit and the elimination of body waste.
Consuming chia seeds is also beneficial for losing weight and supporting weight loss. Thanks to the viscous gel formed in the stomach, they increase the feeling of fullness and act as a natural appetite suppressant. They are also recognized for their sedative and anti-stress properties, antioxidant activity, and beneficial effects on bone health. They have an excellent content of omega-3, proteins (with 9 essential amino acids), and calcium.

In what form?
Whole
Chia seeds are most often offered whole. They are simply harvested, dried, and packaged as they are, in bags. It’s a minimally processed form that retains the seeds’ original nutrients.
Whole chia seeds are easily consumed soaked in water. However, if you dislike their gelatinous texture, you can also sprinkle them on your salads, cereals, or incorporate them into delicious and original recipes like the famous chia pudding.
Powdered
After harvesting, chia seeds can be ground into a fine powder. Easy to consume, the powder can simply be mixed with fruit juice, smoothies, milkshakes, or plant-based milk. It can also replace eggs in recipes.
As shown by this study, ground chia seeds appear to provide more alpha-linolenic acid and eicosapentaenoic acid (omega-3) compared to whole chia seeds.
Oil
Chia seed oil is a format that’s harder to find. It is used both in cosmetics and cooking, for seasoning cold dishes. As shown in this study, Mexican chia seed oil is preferred as it is very rich in fatty acids.
What are the criteria to consider?
1. Variety
Chia seeds can be white or black depending on the period and stage of harvest. But there are no significant differences in terms of nutritional values. Some note a more pronounced taste in black chia seeds.
2. Production method
Preferably choose chia seeds grown organically. This will prevent pesticide residues in the finished product. Additionally, opt for seeds from fair-trade channels that ensure a fair income for local producers.
3. Composition
Whether it’s whole seeds, powder, or chia seed oil, the product must be 100% natural. It should not contain additives or preservatives.
4. Origin
Choose chia seeds from South or Central America (Peru, Bolivia, Argentina, Mexico…). They are generally of high quality and still cultivated traditionally.
