How to apply permaculture principles in the kitchen?

In this new episode of our podcast, the roles are reversed: our host Louise Browaeys is the interviewee this time! And in the role of interviewer we have the talented Matthieu Brillard, who usually handles the technical side.

Louise Browaeys is not only specialized in nutrition; she is also, in her rare spare time, a permaculturist.

She elevates permaculture to the level of art in everyday life and is the author of “Permaculture for Everyday Life” published by Terre Vivante.

According to Yves Cochet, permaculture is not just another way of gardening: “it is another way of designing and acting in the world” end of quote. And today we will explore this other way of designing and acting… in the kitchen.

Permaculture is an ethic with 12 principles, and today we will try to apply these 12 principles in the kitchen.

The guest: Louise Browaeys

Agricultural engineer (AgroParisTech) with a specialty in nutrition, Louise has been working for ten years in the agriculture, food, and ecology sectors.

She is the author or co-author of several books on food, ecology, permaculture, and corporate social responsibility. Notably: “The Share of the Earth: Agriculture as Art” (Delachaux et Niestlé, 2014), “Permaculture for Everyday Life” (Terre Vivante, 2018), “The Planetary Diet” (La Plage, 2020).

She is the regular host of the podcast Révolutions Alimentaires, produced by Darwin Nutrition.
