The fermented papaya, derived from the fruit of the papaya tree, is obtained after a prolonged lactic fermentation process (between 8 and 10 months). Unlike fresh papaya, which is rich in papain, a digestive enzyme, fermented papaya is devoid of enzymes but acquires new biological properties through this transformation. This process, developed by Japanese researchers, is inspired by Filipino dietary practices where the consumption of fermented papaya has been associated with exceptional longevity. Fermentation profoundly alters the composition of the fruit. While vitamins A and C are almost entirely reduced, the final product becomes a genuine source of oligosaccharides, amino acids (the 20 essential amino acids), and bioactive compounds. These substances stimulate the body's natural defenses by increasing the production of glutathione and superoxide dismutase (SOD), major enzymes in the fight against oxidative stress. Used for its antioxidant and immunomodulatory properties, fermented papaya is particularly recommended as a supplement in cases of intense oxidative stress, such as chronic diseases, immune fatigue, or degenerative diseases. Popularized notably for its use in relieving certain symptoms of Parkinson's disease, it remains today a supplement of choice for combating the effects of aging.
