Superoxide dismutase is an essential antioxidant metalloenzyme, naturally present in our body. Superoxide dismutase used for medicinal purposes is sometimes extracted from cows, but plant-derived SOD is now available. Present both inside and outside cell membranes, directly where free radicals are generated, SOD plays a key role in preventing oxidative stress. SOD is present directly within mitochondria, which are responsible for 90% of free radical production. Melons are good sources of SOD.

SOD protects against premature skin aging related to the photo-oxidative reactions induced by UV. Indeed, these photo-oxidative reactions activate matrix metalloproteinases that degrade proteins of the extracellular matrix, particularly collagen.

Preclinical studies have yielded encouraging results for its use as a human therapeutic agent in acute and chronic inflammatory conditions. Mn-SOD, extracellular Mn-SOD, and Cu,Zn-SOD have been described as potential inhibitors of inflammation.
